  • Fat-soluble: A, D, E, K. Absorbed with dietary fat and stored in the liver and fatty tissue. Because they accumulate, deficiency develops slowly but toxicity is possible from high-dose supplements (especially A and D).
  • Water-soluble: the B-complex (B1, B2, B3, B5, B6, B7/biotin, B9/folate, B12) and vitamin C. Dissolve in water, are minimally stored, and excess is largely excreted in urine — so they are needed more regularly and have a wider safety margin, though megadoses can still cause harm.

For most people, a varied diet rich in fruits, vegetables, whole grains, dairy, and protein foods meets vitamin needs without supplements. Specific vitamins warrant attention in defined groups: vitamin D (limited sun exposure), B12 (older adults, vegans), folate (people who may become pregnant), and iron/B-vitamins in restrictive diets (see micronutrient-deficiency-risk). Routine high-dose multivitamins have not been shown to prevent chronic disease in well-nourished populations; targeted supplementation when a gap or deficiency exists is the evidence-based approach.
