"Processing" spans a spectrum; the concern is ultra-processed foods, which are calorie-dense, easy to overeat, and crowd out nutrient-dense whole foods.
Food processing is a spectrum, not a yes/no label. The widely used NOVA framework describes four groups: (1) unprocessed/minimally processed (fresh produce, plain meat, eggs, milk, dried beans); (2) processed culinary ingredients (oils, butter, sugar, salt); (3) processed foods (canned vegetables, cheese, fresh bread — a few added ingredients); and (4) ultra-processed foods (UPFs) — industrial formulations of refined substances and additives (sodas, packaged snacks, instant noodles, many cereals, reconstituted meat products).
Not all processing is bad — freezing, canning, fortifying, and pasteurizing improve safety, shelf life, and nutrition. The concern centers on ultra-processed foods, which tend to be energy-dense, low in fiber, high in added sugars, sodium, and refined fats (see added-sugars, sodium, fiber), highly palatable, and quick to eat — a combination that promotes overconsumption. A tightly controlled trial (Hall et al., 2019, NIH) found people ate ~500 more calories per day on an ultra-processed diet than a minimally processed one matched for macros, and gained weight. Higher UPF intake is associated in observational studies with obesity and cardiometabolic disease.
Practical guidance: build the diet around minimally processed whole foods, use the ingredient list to spot UPFs (long lists with sugars, refined oils, additives — see nutrition-labels), and treat UPFs as the smaller, discretionary share. This supports satiety and fat loss (see fat-loss-nutrition) without demonizing all packaged food.
